There are those who say that Kunming cuisine has no distinct features, not being particularly spicy or sour, which is perhaps why it is enjoyed by such a wide scope of nationalities. Kunming cuisine does, however, have its characteristics, but only those who settle here can learn to savor its freshness and lightness.
Guoqiao Mixian (rice-flour noodles) Many people have heard of Kunming's Guoqiao Mixian (rice-flour noodles). It is a typical Yunnan local flavor that could only be tasted in some parts of Yunnan.
This famous dish consists of several courses. The first course: put the food items, including raw pork, cooked chicken pieces, pork liver, slices of squid and slices of carp into a big bowl of chicken soup with very thick oil on top (in order to keep the heat for cooking). Vegetables are then added afterwards as the second course, and the rice noodles follow as the last course
There are many very old restaurants having history of over 100 years. Many restaurants have Shiheyuan-courtyards, with gray, brick outside walls in the front (In Chinese, these style of walls are called ZhaoBi).
Mushroom Soups Few people realize how delicious are soups made of shanmao wild herbs, edible flowers, and wild mushrooms. Upon the mention of dishes such as ganba mushrooms, niugan mushrooms, and Xuanwei ham, local gourmets visibly salivate. Because of all these kinds of mushrooms, herbs are coming from large different areas of mountains, all restaurants offer authentic local flavors of making special mushrooms soups and hot pot.
